Responsibilities
To ensure that all stocks are kept under optimum conditions and all dishes are being prepared to the correct recipe and to the correct quantity
To ensure that junior cooks and trainees receive the right training and optimum guidance
To ensure that no horseplay is allowed in his section and that all staff under his control are treated fairly and with courtesy
To ensure sectional productivity, product quality and sustained consistency, on strictest hygiene standards to meet established food safety levels
To maximise profitability by monitoring and controlling operating cost
Ensure sectional and cross sectional functionality and effective communication with the respective section, departmental and cross departmental communication and a positive work environment and team spirit
Assign work schedules and day-to-day assignments of specific job tasks
Supervise staff to assure that all district policies are followed and the transport of food and non-food to dispatching area
Attend monthly Kitchen manager's meetings and participate in planning and conducting as requested

Requirements
High school Diploma or equivalent with at least 5 years of international culinary and management experience in hotels, restaurants or catering institutions
Knowledge in food production and handling processes and trained and skilled in classic and contemporary Cuisine
Practically familiar with HACCP, ISO and SOP systems and standards and advanced hygiene management
Proficiency in using MS office, Word, Excel and Powerpoint
Good command of English and Chinese both spoken and written
Lead a team and follow standardized practices and/or methods
Interact with colleague in a courteous, tactful and pleasant manner, sometimes in stressful and busy situations
Good personnel and management skills
Immediately Available is preferable
